Foodie Friday» Apple Chunk Bread Recipe

Today is my seventh day of 7. I miss coffee more than I can begin to tell you. I daydream about it. I don’t just miss the caffeine, I miss the taste. I miss holding it in front of my nose and just breathing. Yes, I am insane. I’m sure this will pass. I hope to not be tortured for the remaining 23 days. One of the joys from my food list for the month though is baking bread! On Saturday I made one loaf of apple chunk bread. On Sunday I made another because the first was already almost gone. It’s so delicious. It’s yummy by itself fresh out of the maker. It’s tasty sliced with butter. It’s delightful with strawberry jam. It’s delicious with cinnamon & sugar sprinkled on top. It’s appetizing with peanut butter. It’s savory with nutella. And it is absolutely unbeatable with sliced cheddar melted on top. Oh? You want to make it? Here’s how! You’ll need 1 cup of milk, 3 tbs vegetable oil, 2 tbs sugar, 1/2 tsp cinnamon, 1 1/2 tsp salt, 3 cups bread flour, 1 1/2 tsp yeast, 1-1 1/2 medium apples peeled & diced.

Add the ingredients to the bread maker in the order that I listed them, wet on bottom, dry on top. Scoop out a little spoon size bowl on top of the flour in the center, and put the yeast in there. Wait on the apples if you’re going to be spending any more time in the kitchen. If you can wait until the second kneading cycle, add the apples then. If your bread maker has only one kneading cycle, or if you’re not staying in the kitchen after you start the loaf, just go ahead and put them in at the beginning.
